Coffee and Wine Similarities

Production of quality coffee is similar in complexity and detail to a world-class wine. The finest coffees are bought on the same basis of flavor and taste as wine.

Flavor, acidity and body are the three fundamental tasting terms of coffee.

Flavor is the total impression of aroma, which is the odor or fragrance of the brewed coffee.

Acidity is the brisk, snappy quality that makes it refreshing.

Body is the weight of the coffee in the mouth.

Earthy describes the earth or spiciness of certain coffees.

Mellow means well-balanced coffee of low to medium acidity.

Mild denotes a coffee with harmonious, delicate flavor.

Strong is often the assertive flavor of dark-roasted beans.

Sweet means smooth, palatable coffee, free from defects and harsh flavors.

Winey is a desirable flavor reminiscent of fine red wine.

From these few examples, it's easy to see how coffee and wine tasting terminology are very similar.

Oolong Teas


Have you ever gone into a Chinese restaurant and wondered what kind of delicious tea they serve? Most often, Chinese restaurants serve a tea called oolong tea and it is a traditional Chinese type of tea that falls somewhere in between green tea and black tea in flavor.

There are four types of teas that come from the leaves of the camellia sinensis plant, Those teas are green, black, oolong, and white.

The word "oolong" in Chinese, means "black dragon" and when dried, the oolong tea leaves have a black thread-like appearance. The many varieties of oolong tea all differ greatly in flavor.

The flavor of oolong tea depends on how long the tea leaves are given to ferment. The oolong tea fermentation process is carefully stopped when the leaves are still 30% red and 70% green.

The most critical part in the production of oolong tea is knowing exactly when to stop the partial oxidation. Because Oolong teas can have different degrees of oxidation, some are closer to black teas, while others resemble more of a green tea.

At the final stage of processing, a tea master grades the tea according to the flavor and unique characteristics of each batch. Then the tea is sorted, packaged and shipped all over the world.

If you would like to taste some of this amazing tea, it is recommended that you start off with an oolong tea sampler. They are a wonderful introduction to the fun discovery of oolong teas.

Monster Munch


INGREDIENTS:

3 cup Puffed rice cereal
1 cup Dried apricots; chopped
1 cup Raisins
1 cup Dry-roasted unsalted peanuts
1/3 cup Margarine
1 lb Marshmallows; large
1/2 cup Peanut butter


DIRECTIONS:
In a large bowl, combine cereal, apricots, raisins and peanuts.
In microwave safe 13x9 inch baking dish, melt margarine and marshmallows on high 2 minutes.
Stir.
Add peanut butter.
Cook on high 2 minutes longer.
Stir until blended.
Add cereal mixture to dish.
Toss until well coated. Working quickly, with greased hands, form into balls, using about 1/2 cup mixture per ball.
If mixture begins to cool and harden, cook on high 30 seconds or until softened.

Coffee bearing trees are at their prime when they are between 7 and 8 years old.

Acidity in coffee commands a premium price because acidity in coffee provides brightness or point in the cup.

The jasmine-like, beautiful aroma of coffee flowers, carried by an off-shore breeze, can be smelled far out to sea as you approach a coffee port.

During the process of roasting dark coffee beans, coffee oil gathers in pockets throughout the bean and is forced out to the surface of the bean as moisture is lost giving the bean an oily appearance.

Coffee trees are actually bushes that have a total life of around 20 to 25 years, and can grow to over 20 feet in height.

Fresh, hot water, in fusion with the coffee, should be at 190ş Fahrenheit for optimum brewing.

57% of coffee is drunk at breakfast; 34% between meals and 13% at other meals.

The world's largest coffee producer is Brazil with over 3,970 million coffee trees.

To remove mineral deposits in a tea pot or burnt spots on a coffee pot, put some ice cubes, cut-up lemon, and salt with a small amount of water, swish around and let sit overnight.
