Kopi Luwak coffee comes from the Indonesian island of Sumatra, an area well-known for its excellent coffee.
There is a small animal native to the area called a Paradoxurus. That's actually the scientific name, the locals call them luwaks. They live in the trees and one of their favorite foods is the red, ripe coffee cherry.
While the bean is in their stomach, it undergoes fermentations until finishes the journey through the digestive system, then exits. The still-intact beans are collected from the forest floor, cleaned, then roasted and ground just like any other coffee.
While the process is not pleasant to think about it produces coffee that is said to be like no other. It has a rich, heavy flavor with hints of caramel or chocolate and the body is velvety smooth.
The average total annual production is only around 500 pounds of beans. Because of the rarity of this coffee, the price is outrageous. The current cost for a pound of Kopi Luwak is around $300 or more.
If you can even find it, some will sell it by the cup. But you won't likely find it at your local coffee shop. Those who enjoy this rare and unusual experience are paying for the sheer enjoyment of a rare delicacy.

There's a new process for brewing coffee that has sparked a whole new breed of coffee makers. Pod coffee makers are becoming very popular and some are wondering if the drip coffee makers are going to soon become obsolete.
The pod coffee makers fall in the middle of a drip coffee maker and an espresso machine. The boiler of the pod coffee maker rapidly heats the water and drives it through the coffee grounds. By using light pressure, the brewing process is faster than with regular drip machines.
In order to maintain the preceise amount of pressure and water flow through the coffee, pre-packed coffee pods are used. This ensures that the coffee is packed to the proper level for optimum brewing.
This brewing process produces a nice foamy layer on the top of your coffee that adds a luxurious touch. Not quite the crema you get on espresso, but close.
You brew one cup at a time, and the whole process takes only one to two minutes from when you turn on the machine, to drinking your fresh coffee. You just flip open the machine, place in a pod, close it and hit the brew button.
With a pod coffee maker, you no longer have to settle for stale coffee sitting on the warming plate, nor do you have to sit and wait for a pot to brew.
It's perfect for the individual who craves a java fix but doesn't want to make a whole pot that will go to waste.
Each pod has a measured portion of ground coffee or espresso, compressed between two biodegradable filter paper sheets. They are sold in different varieties of roasts from mild to medium to decaffeinated. So you can brew each individual cup to any desired coffee drinkers taste.

These refrigerator cookies are made with lemon and pecans, then frosted with a simple lemon icing.
Ingredients:
2 cups ground pecans
2 eggs, beaten
1 teaspoon lemon extract
2 cups sugar
2 cups sifted all-purpose flour
1/4 teaspoon salt
lemon icing, below
Instructions:
Preheat oven to 325°.
Using hands, mix together the ground pecans, beaten eggs, lemon extract, sugar, flour, and salt.
Shape into 2 rolls about 1 1/2 inches in diameter.
Wrap rolls in waxed paper and chill for several hours.
Cut into slices about 1/8-inch thick and place on greased cookie sheets.
Bake lemon cookies in a preheated 325° oven for about 8 minutes.
Brush lemon cookies with lemon icing while still hot.
Makes about 4 to 5 dozen lemon cookies.
Ingredients:
2 cups confectioners' sugar
1 teaspoon grated lemon rind
lemon juice
yellow food coloring, optional
Sift confectioners' sugar into a mixing bowl.
Add grated lemon rind, a little food coloring, if used, and enough lemon juice to moisten to spreading or brushing consistency.

A Belgian living in Guatemala invented the first instant coffee in 1906 and later immigrated to the United States. His name, ironically enough, was George Washington.
