Want to brew the perfect cup of coffee? Here are some brewing tips that will make a difference in every single cup you drink.

A clean pot is essential and can make a world of difference in the taste of your coffee. Old oils from previous batches of coffee and soap residue left on the pot makes coffee taste bad. Baking soda and water work well for cleaning. Be sure to rinse extra good so no residue is left behind.

The water you use for your coffee will affect the taste more than anything. Coffee is 99% water so use clean filtered or bottled water free from chlorine and other minerals that will affect the taste of your coffee.

Use a stainless steel or gold mesh filter instead of paper filters. Paper filters release dyes, chlorine and bleach that affect taste. If you insist on using paper filters buy the unbleached, brown paper filters.

For the best results use whole bean coffee and grind the coffee beans just prior to use. You might think it's an inconvenience compared to ground coffee, but once you taste the difference you'll never go back. If you still want to use ground coffee, make sure you use quality coffee and a drip grind.

Use 2 level tablespoons of coffee per 6 ounces of water. This can be adjusted for individual taste preference. Make sure to spread the grounds evenly in the coffee filter so full brewing is achieved.

Drink your fresh coffee right away for the best flavor. Coffee will break down quickly if left on a heat source. A clean, preheated air pot or stainless steel Thermos will keep coffee hot for about an hour without hurting the flavor. Coffee should never be reheated or microwaved.

If you follow these practices, every cup you brew will be perfect coffee.

Starbucks New Gourmet Cocoa


Starbucks Coffee has a new chocolate beverage coming out very soon. It's a hot chocolate concoction called "Chantico," named after the Aztec goddess of the hearth.

The beverage will initially debut in Starbucks coffee shops in January 2005 in all of its locations in the U.S. and Canada.

Unlike hot chocolate, which is made from cocoa powder, Chantico is steamed with cocoa butter and whole milk. If you are calorie or carb conscious you probably won't be rushing out to try this new drink.

The drink is aimed at attracting chocoholics rather than appealing to diet-conscious consumers. Early nutrition figures say a 6-ounce cup of Chantico contains 390 calories, 21 grams of fat and 51 carbs.

Starbucks is expected to offer more details about the new beverage in the weeks to come.

Rob Grady, Starbucks' director of hot beverages says, "This will establish Starbucks as somebody who will be in the chocolate category in a bigger way."

Last year Starbucks sales topped $5 billion, most of it from coffee. With Chantico, Starbucks may be trying to fix a problem that has long nagged the company: getting customers into their stores at midday and after dinner.

The success of Starbucks new chocolate drink will depend on taste rather than price. They have proven that most people worldwide will wait in long lines and gladly pay dearly for drinks that taste good.

Starbucks will also be keeping an eye on the new opening a series of Juan Valdez Café coffee shops across the country.

The National Federation of Coffee Growers of Colombia has a goal to open 300 stores worldwide in the next five years.

The Columbian Growers are best known for their fictional spokesman, Juan Valdez, the guy with the poncho and mule.

The cafés will serve regular espresso drinks as well as traditional Colombian beverages like nevado arequipe (iced coffee with dulce de leche) and traditional pastries.

Over half a million Colombian coffee growers own stakes in the cafés, and all retail profits will go back to them, helping to improve their standard of living.

The new Juan Valdez Café coffee shops will immediately have a huge business challenge by competing with coffee giants like Starbuck's who already have loyal customers.

Starbuck's currently operates nearly 6,000 stores in the United States alone and plans to open 1,500 new stores globally in its fiscal 2005.

The future looks bright for Starbucks. The company has upped its long-term store-growth forecast to 30,000 stores worldwide, up from its earlier forecast of 25,000 stores.

Pumpkin Bread


Ingredients:

1 cup Crisco
4 cups sugar
6 eggs
1 can (1 lb 13oz) pumpkin
5 cups flour
3 tsp baking soda
¾ tsp baking powder
2 ¼ tsp salt
3 tsp cinnamon
1 cup water
1 cup walnuts or pecans

Instructions:
Preheat oven to 350°.
Cream Crisco and sugar; add eggs and pumpkin beat thoroughly.
Sift together flour, baking soda, baking powder, salt, and cinnamon.
Add to pumpkin mix alternately with water. Then add nuts.
Pour ½ full into greased and floured pans and bake as follows.
For 3 (9x5) pans bake for 1 hour in preheated oven at 350 degrees.
For 5 (4x8) pans bake for 1 hour in preheated oven at 325 degrees.
Let cool.
Serve with a dollop of Cool Whip on top.

The Arabica is the original coffee plant. It still grows wild in Ethiopia.

The heavy tea tax imposed on the colonies in 1773, which caused the "Boston Tea Party," resulted in America switching from tea to coffee. Drinking coffee was an expression of freedom.

The French philosopher, Voltaire, reportedly drank fifty cups of coffee a day.

In the year 1790, there were two firsts in the United States; the first wholesale coffee roasting company, and the first newspaper advertisement featuring coffee.

In 1727, as a result of seedlings smuggled from Paris, coffee plants first were cultivated in Brazil. Brazil is presently by far the world's largest producer of coffee.

Espresso is just a type of brewing method; it was invented to make fresh coffee fast.

October 1st is the official Coffee Day in Japan.

When it is in bloom, the coffee tree is covered with 30,000 white flowers which begin to develop into fruit after 24 - 36 hours.

It takes an entire year for a coffee tree to produce only 1 to 1 ½ pounds of coffee. This represents approximately 2,000 hand-picked cherries to result in one pound of roasted coffee.

80% of adult Americans are regular or occasional coffee drinkers. Only 14% say they're daily consumers of gourmet coffees or coffee blends like latte, espresso, café mocha, cappuccino and frozen and ice-blended coffee beverages.
